Paleo Choco-orange Bars

Date and Cashew bars

A yummy paleo treat

200g Dates
200g Cashew Nuts*
50g Sultanas (optional)
20g Cocoa Powder (Green & Blacks Organic Cocoa Powder is nice)
Zest of 1 orange

Whizz up the cashew nuts in a food processor for 5-10 minutes until the oil is released from the nuts and they start to form a nut butter. This is important as it means the mixture sticks together. If you don’t do this for long enough the finished bars will be crumbly.

Add the other ingredients and whizz again until every thing is chopped up and starts to stick together. Line a baking tray with greaseproof paper or tin foil, then squish the mixture into the tray. Press down hard with your knuckles so it forms a solid mass. Cut into bars.

I prefer to use a circular cake tin lined with foil. After the first ‘squish’ I fold the excess foil over the mixture and do a second more thorough ‘squish’.

*Almonds make a good alternative to cashew nuts in this recipe.

    The trouble with these yummy recipes is that I end up eating far more of them than my block count allows!

    Sorry Lawraine :-) Although I find them quite rich so I can’t eat too much. You could always try paleo/primal instead of zone? Focus on quality and eat as much as you like.

    Dying to try these for my girlfriends kids. Trying to get them to eat healthier and making their snacks healthier will be a big help and good starting point!
