
Is there a physical reason why curry or chicken breast and vegetables is unappetising when we first wake up or have we been conditioned to want cereal, toast and pancakes? Whatever the reason, when you make the switch to a Paleo/Primal lifestyle, breakfast seems to be a bit of a mental stumbling block.
So when I’m struck by the Paleo breakfast muse it seems rude not to share it with the world. This breakfast has all the childhood comfort of boiled egg and toast soldiers but with added bacon, what’s not to love?
Grill/fry streaky bacon until crispy.
Boiled eggs have to have set whites and perfect dippy yolks for me to be happy – this method works for me. Lower large eggs into a pan of boiling water. Remove after 5 minutes. (Medium eggs take closer to 4 minutes, very large eggs closer to 6)
