Paleo and Zone: Thai Red Chicken Curry

Zone Recipe – Lamb Moussaka with Greek Salad
A Greek classic of layered lamb mince and aubergine topped with a white sauce and baked. My version uses courgettes (zucchini) instead of aubergine (eggplant) to save all the faff of salting and draining the aubergine. The topping includes ricotta cheese which makes it light and delicious.
